Butter is extremely easy to substitute in vegan baking. You can use several things, depending on what you are after:
Virgin coconut oil
Nut or vegetable oils
Cold-pressed Canola oil
Light olive oil
Spectrum Organic vegetable shortening
We rely on two options with confidence. We prefer the flax option because it its more natural.
Ener-G Egg replacer. Use 1 and 1/2 teaspoons of this commercial replacer, plus 2 T water and 1 t. vanilla to equal one egg.
Flax: Or add some fiber, too, and use ground flax seeds. Use 1 T. of flax dissolved in 3 T. warm water (let sit for 10 min. before proceeding with recipe) to substitute for one egg.
